Horchata


Horchata is a Mexican rice drink with many variations. The recipe I used is pretty simple; there is just a long processing (wait) time.

What you will need:
1 C White rice
3 C Water
Cinnamon stick (1 tsp ground cinnamon can be used, but the stick is preferred)
¾ C Sugar
1 C Milk
1 tsp Vanilla Extract
A fine strainer or cheese cloth

Step 1: In blender mix rice until it is a course powder. There may be some bigger pieces of rice at this point, that’s OK.

Step 2: Combine rice, 2 cups of the water and the cinnamon in a large bowl. Cover and refrigerate over night.
Step 3: Pour contents of bowl, remaining water, milk, sugar and vanilla into blender and blend until sugar starts to break down. Approximately 1-2 minutes.
Step 4: Pour everything back in to bowl, cover and refrigerate 2-3 hours, this will allow all of the flavors to meld together.
Step 5: Using cheesecloth or strainer, pour contents of bowl into a pitcher. Store this in the refrigerator.
I only needed three cups total for the cake and frosting, so the rest was enjoyed over ice with a dash of cinnamon.
